The first Valentine's Day that my husband and I were together we had just gotten married, we had no money, we lived in the middle of Provo, UT, and my bonus son was with us. Talk about romantic...not! So we decided to create our own tradition. We put Max to bed. Got in our comfiest sweats, and cooked a fancy five-course meal at home together. We've done it every year since and I truly love it.
That first year for the appetizer course, I made an artichoke dip with pita chips. This year I am doing a shrimp cocktail. Next, we do a soup course. This year I chose a chilled raspberry soup. It's the most perfect color for the occasion and I can't wait to share it with you! The salad course is always the same. Caesar salad. It's simple and we love it. Sometimes we make our own dressing, other times we don't. It all depends on how we're feeling that year. For the main entree the first year we had bacon-wrapped fillet mignon. This year, we are having locally sourced steak with a red wine balsamic sauce that is in my February meal plan from my dear friend. And of course the most important part, for dessert we are having a raspberry, white chocolate cheesecake.
We eat our immaculately prepared meal in candlelight, on the living room floor, in our sweats, and I can't imagine a better way to celebrate the month of love.
